Ingredients:
1 large zucchini spiralized
2 large eggs
salt
black pepper
red pepper flakes
olive oil
Utensils:
baking sheet
aluminum foil
spatula
paper towels
siralizer
knife
Instructions:
prepare ingredients
preheat the oven to 400°F
line a baking sheet with foil and spray with olive oil and set aside
place the zoodles in a single layer on paper towels
pat the zoodles dry then sprinkle all over with salt and toss to coat
allow the salted zoodles to sit for 10 minutes so the salt releases some of the liquid in the zucchini
squeeze the zoodles in the paper towels to release excess water
separate the zoodles into 2 equal piles and place each one on the prepared baking sheet and create a nest
create a 2 inch well in the center of each nest and place in the oven at 400°F for 15 minutes then remove
crack an egg into each well in the zucchini nests
sprinkle salt, black pepper, and red pepper flakes to taste over each nest and place them back in the oven for an additional 10-15 minutes or to your preferred doneness of the egg
remove from the oven and allow them to sit and cool for at least 5 minutes before moving
When you are ready for serving use a spatula to pick up each nest to a plate and add any additional toppings you desire.
