Zucchini Egg Nest

Ingredients:

  • 1 large zucchini spiralized

  • 2 large eggs

  • salt

  • black pepper

  • red pepper flakes

  • olive oil

Utensils:

  • baking sheet

  • aluminum foil

  • spatula

  • paper towels

  • siralizer

  • knife


Instructions:

  • prepare ingredients

  • preheat the oven to 400°F

  • line a baking sheet with foil and spray with olive oil and set aside

  • place the zoodles in a single layer on paper towels

  • pat the zoodles dry then sprinkle all over with salt and toss to coat

  • allow the salted zoodles to sit for 10 minutes so the salt releases some of the liquid in the zucchini

  • squeeze the zoodles in the paper towels to release excess water

  • separate the zoodles into 2 equal piles and place each one on the prepared baking sheet and create a nest

  • create a 2 inch well in the center of each nest and place in the oven at 400°F for 15 minutes then remove

  • crack an egg into each well in the zucchini nests

  • sprinkle salt, black pepper, and red pepper flakes to taste over each nest and place them back in the oven for an additional 10-15 minutes or to your preferred doneness of the egg

  • remove from the oven and allow them to sit and cool for at least 5 minutes before moving


When you are ready for serving use a spatula to pick up each nest to a plate and add any additional toppings you desire.
