Wonton/Dumpling Wrappers

Ingredients:

  • 2 cups whole wheat flour

  • 1 teaspoon kosher salt

  • 1 large egg beaten

  • 1/2-1 cup cold water

  • cassava flour for dusting

Utensils:

  • fork

  • kitchen towel

  • rolling pin

  • 3 inch biscuit cutter only if you want to make round wrappers


Instructions:

  1. prepare ingredients

  2. add 2 cups of whole wheat flour into a pile on a clean work surface

  3. sprinkle 1 teaspoon of salt over the flour and make a well in the center

  4. pour 1 beaten egg into the well along with 1/2 cup of water and slowly mix in a little bit of flour at a time

  5. add more water a little bit at a time if needed until the dough holds together and forms a ball

  6. use your hands to knead the dough for 5-6 minutes

  7. cover the kneaded dough with a damp kitchen towel and let it rest on the counter for 30 minutes

  8. once it has rested, knead for an additional 2 minutes

  9. dust your work surface with cassava flour to prevent the dough from sticking and roll out the dough until it is about 1/16-inch thick

  10. cut the dough into squares or use a biscuit cutter to cut circles and stack the wrappers on top of each other in a pile

  11. gather up the dough scraps and re-roll them to create more wrappers and repeat this process until all the dough has been used up


When you are ready for use, use the wrappers for egg rolls, dumplings or anything else you need. to freeze, wrap the piles of wrappers in plastic wrap and place in the freezer. To thaw, take them out of the freezer and place them in the fridge for 2-3 hours then use.
