Whole Wheat Sandwich Bread

Ingredients:

  • 1 1/2 cups warm water 110-115°F

  • 2 1/4 teaspoons active dry yeast

  • 1/4 cup honey

  • 3 tablespoons unsalted butter or ghee softened

  • 3 1/4 cups-4 1/4 cups whole wheat flour

  • 1/2 teaspoon kosher salt

Utensils:

  • stand mixer with dough hook

  • whisk

  • large bowl

  • plastic wrap

  • 9 x 5 inch loaf pan


Instructions:

  1. prepare ingredients

  2. in the bowl of a stand mixer add 1 1/2 cups of warm water

  3. add 2 1/4 tsp of yeast to the bowl and stir together and set aside for 5-7 minutes or until foamy on top

  4. add 1/4 cup of honey to the bowl

  5. add 3 tbsp of softened butter to the bowl and whisk together until smooth

  6. place the bowl onto the stand mixer and add 2 cups of whole wheat flour

  7. add 1/2 tsp of salt to the mixer and mix on medium speed for 3 minutes

  8. add the additional 1 1/4 cups of flour to the mixer and continue mixing on medium speed until the dough pulls away from the sides of the bowl; if the dough doesn't pull away from the sides then add more flour a couple tablespoons at a time, letting it mix before adding more, until the dough pulls away from the sides

  9. continue mixing the dough for an additional 6-10 minutes until the dough is smooth and elastic

  10. lightly grease a large bowl and transfer the dough into the bowl

  11. cover the dough with plastic wrap and let it rise in a warm space for 30-45 minutes until doubled in size

  12. lightly grease a 9 x 5 inch loaf pan and set aside

  13. punch the dough down and shape it into a loaf

  14. place the dough into the prepared pan

  15. cover the dough loosely with greased plastic wrap and set it aside in a warm space for 30-45 minutes until it has doubled in size

  16. meanwhile, preheat the oven to 350°F

  17. once the dough has risen, remove the plastic wrap and place it in the oven at 350°F for 40-45 minutes until the loaf sounds hollow when lightly tapped

  18. remove from the oven and allow it to cool completely before slicing


When you are ready for serving, slice the bread and use it for toast or a sandwich.
