Ingredients:
1 1/2 cups warm water 110-115°F
2 1/4 teaspoons active dry yeast
1/4 cup honey
3 tablespoons unsalted butter or ghee softened
3 1/4 cups-4 1/4 cups whole wheat flour
1/2 teaspoon kosher salt
Utensils:
stand mixer with dough hook
whisk
large bowl
plastic wrap
9 x 5 inch loaf pan
Instructions:
prepare ingredients
in the bowl of a stand mixer add 1 1/2 cups of warm water
add 2 1/4 tsp of yeast to the bowl and stir together and set aside for 5-7 minutes or until foamy on top
add 1/4 cup of honey to the bowl
add 3 tbsp of softened butter to the bowl and whisk together until smooth
place the bowl onto the stand mixer and add 2 cups of whole wheat flour
add 1/2 tsp of salt to the mixer and mix on medium speed for 3 minutes
add the additional 1 1/4 cups of flour to the mixer and continue mixing on medium speed until the dough pulls away from the sides of the bowl; if the dough doesn't pull away from the sides then add more flour a couple tablespoons at a time, letting it mix before adding more, until the dough pulls away from the sides
continue mixing the dough for an additional 6-10 minutes until the dough is smooth and elastic
lightly grease a large bowl and transfer the dough into the bowl
cover the dough with plastic wrap and let it rise in a warm space for 30-45 minutes until doubled in size
lightly grease a 9 x 5 inch loaf pan and set aside
punch the dough down and shape it into a loaf
place the dough into the prepared pan
cover the dough loosely with greased plastic wrap and set it aside in a warm space for 30-45 minutes until it has doubled in size
meanwhile, preheat the oven to 350°F
once the dough has risen, remove the plastic wrap and place it in the oven at 350°F for 40-45 minutes until the loaf sounds hollow when lightly tapped
remove from the oven and allow it to cool completely before slicing
When you are ready for serving, slice the bread and use it for toast or a sandwich.
