Ingredients:
2/3 cup mashed sweet potatoes
3 large eggs
1/4 cup sugar free maple syrup or pure maple syrup
3 tablespoons butter, ghee, or coconut oil melted
1 teaspoon vanilla extract
1/3 cup coconut flour
2 teaspoons cinnamon
1/2 teaspoon baking soda
1/8 teaspoon salt
Utensils:
stand mixer or large mixing bowl and whisk
muffin tin
cooling rack
Instructions:
prepare ingredients
preheat the oven to 400°F
get a stand mixer and add 2/3 cup of mashed sweet potatoes
add 3 large eggs to the mixer
add 1/4 cup of syrup to the mixer
add 3 tbsp of melted butter to the mixer
add 1 tsp of vanilla extract to the mixer and mix until smooth
add 1/3 cup of coconut flour to the mixer
add 2 tsp of cinnamon to the mixer
add 1/2 tsp of baking soda to the mixer
add 1/8 tsp of salt to the mixer and mix until evenly combined
grease a muffin tin and evenly distribute the batter into 6 of the muffin tins
place in the oven at 400°F for 15-20 minutes or until an inserted toothpick comes out clean
remove from oven and allow them to cool for 10 minutes then remove and allow them to completely cool on a wire rack
Keep extra muffins in an airtight container in the counter or fridge for longer lasting.
