Ingredients:
2 cups sun-dried tomatoes
1 cup roasted red pepper
1 cup basil
2 garlic cloves
1/2 cup almonds
1/3 cup parmesan cheese finely grated or nutritional yeast
1 teaspoon salt
1/2 lemon juiced
3/4 cup olive oil
1/4 cup water
Utensils:
food processor
airtight container
Instructions:
prepare ingredients
place all ingredients into a food processor and blend until smooth
pour into an airtight container and keep in the fridge until you are ready for serving
Use the pesto in pasta, sandwiches, or anything else you desire.
