Spanakopita Frittata

Ingredients:

  • 2 tablespoons olive oil

  • 2 garlic cloves minced

  • 5 cups baby spinach

  • 1/2 cup green onion chopped

  • 1 cup parsley chopped

  • 1/2 cup dill chopped

  • 8 large eggs

  • 1/4 cup water

  • 1/2 cup feta cheese crumbled

  • salt

  • black pepper

Utensils:

  • knife

  • cutting board

  • large mixing bowl

  • whisk

  • oven safe skillet with lid

  • mixing spatula


Instructions:​​

  1. prepare ingredients

  2. preheat the oven to broil

  3. get a large mixing bowl and crack 8 large eggs into it

  4. pour 1/4 cup of water into the bowl

  5. add salt and black pepper to taste to the bowl and whisk together until smooth

  6. get a skillet over medium heat and add 2 tbsp of olive oil

  7. add 2 minced garlic cloves to the skillet and cook for 1-2 minutes or until brown and fragrant

  8. add 5 cups of baby spinach to the skillet and cook until wilted

  9. add 1/2 cup of chopped spring onion to the skillet

  10. add 1 cup of chopped parsley to the skillet

  11. add 1/2 cup of chopped dill to the skillet and cook stirring for 1 minute

  12. evenly distribute the spinach and herbs on the bottom of the skillet

  13. pour the whisked eggs all over the greens

  14. sprinkle 1/2 cup of crumbled feta cheese evenly to the top of the eggs

  15. cover the skillet with the lid and allow it to sit and cook for 7-8 minutes

  16. remove the lid from the skillet and transfer it to the oven under the broiler for 3-4 minutes or until slightly browned and puffed up

  17. remove frittata from the oven and allow it to cool for at least 5 minutes before removing

When you are ready for serving cut a slice of the frittata and enjoy.
