Snickerdoodles

Ingredients:

Cookies:

  • 1/2 cup butter or ghee softened

  • 1 teaspoon vanilla

  • 1 large egg

  • 2 cups blanched almond flour

  • 1 teaspoon baking soda

  • 1 teaspoon baking powder

  • 3/4 cup compliant sugar

  • 1 tablespoons cinnamon

Cinnamon Sugar:

  • 1/4 cup compliant sugar

  • 1 tablespoon cinnamon

Utensils:

  • mixing bowl

  • whisk

  • mixing spatula

  • cookie scoop

  • baking sheet

  • parchment paper

  • wire rack


Instructions:

  1. prepare ingredients

  2. preheat the oven to 350°F

  3. line a baking sheet with parchment paper and set aside

  4. get a mixing bowl and add 1/2 cup of softened butter

  5. add 1 egg to the bowl

  6. add 1 tsp of vanilla extract to the bowl and whisk together until smooth

  7. add 2 cups of almond flour to the bowl

  8. add 1 tsp of baking soda to the bowl

  9. add 1 tsp of baking powder to the bowl

  10. add 3/4 cup of sugar to the bowl

  11. add 1 tbsp of cinnamon to the bowl and mix together with a mixing spatula until combined

  12. get a small mixing bowl and add 1/4 cup of sugar and 1 tbsp of cinnamon and mix together

  13. use a cookie scoop to scoop some dough into your hands then roll into a ball

  14. roll the dough ball around in the cinnamon sugar and place on the prepared baking sheet

  15. repeat this process nine more times until you get 10 dough balls

  16. press each of the balls down slightly but not too much because the cookies don't expand much in the oven

  17. place the cookies in the oven at 350°F for 10 minutes then remove and allow them to cool slightly then transfer to a wire rack to completely cool


Keep in an airtight container on the counter or fridge for longer lasting.
