Pork Potstickers

Ingredients:

Filling:

  • 1 pound ground pork

  • 1 baby bok choy chopped

  • 10 dried shiitake mushrooms rehydrated, wringed out, and chopped

  • 2 green onions chopped

  • 2 garlic cloves minced

  • 2 teaspoons ginger root minced

  • 1 teaspoon sesame oil

  • 2 teaspoons kosher salt

  • 1/2 teaspoon black pepper

  • 1 egg beaten

Cooking:

Sauce:

  • 1/2 cup coconut aminos or soy sauce

  • 2 tablespoons rice wine vinegar

  • 2 teaspoons sesame oil

  • 1 1/2 teaspoons red pepper flakes

  • 2 garlic cloves minced

  • 1 green onion minced

  • 1 teaspoons toasted sesame seeds

  • 2 tablespoons honey

  • 2 tablespoons sriracha

Utensils:

  • 2 large baking sheets

  • large pot

  • slotted spoon

  • wire rack

  • large skillet

  • tongs

  • 2 mixing bowls

  • whisk

  • knife

  • cutting board

  • kitchen towel


Instructions:

  1. prepare ingredients

Potstickers:

  1. get a mixing bowl and add all of the filling ingredients and use your hands to mix together until combined and set aside

  2. keep the wonton wrappers under a damp kitchen towel as you work and only work with one at a time

  3. fill the center of a wonton wrapper with 1 heaping tablespoons of the filling and crimp the edges to create the potsticker seem and pinch tightly to seal

  4. set the potsticker aside on a large baking sheet and repeat this process with the remaining filling and wrappers

  5. fill a large pot with water and bring to a boil

  6. once boiling, add about 10 of the potstickers to the boiling water and cook for 4 minutes then remove to a wire rack set over a baking sheet to drain the excess water

  7. repeat this process with the remaining potstickers until they are all cooked

  8. heat a large skillet over medium-high heat and add 1 tbsp of olive oil

  9. add 10 potstickers to the pan and cook for about 2 minutes until golden brown then return to the wire rack and repeat the browning process with the remaining potstickers making sure to add another 1 tbsp of olive oil before each batch

Sauce:

  1. get a mixing bowl and add all the sauce ingredients and whisk together to combine


When you are ready for serving dip the potstickers in the sauce and enjoy.
