Ingredients:
Rolled Oats:
1/2 cup rolled oats
1 tablespoon chia seeds
1/2 cup unsweetened almond milk
1/4 cup greek yogurt
2 teaspoons honey
1/2 teaspoon vanilla extract
1/2 teaspoon cinnamon
1/8 teaspoon nutmeg
1/2 large peach pitted and blended
1 scoop protein powder optional
Peach Topping:
1/2 large peach pitted and diced
1 tablespoon lemon juice
2 tablespoons water
1/2 teaspoon cinnamon
1 tablespoon complaint brown sugar
Optional Toppings:
granola
sugar-free whipped cream
almond butter
additional cinnamon
Utensils:
airtight jar
spoon
high-speed blender
small sauce pan
mixing spatula
Instructions:
prepare ingredients
Peach Topping:
add all the peach topping ingredients into a small sauce pan and and place on the stove over medium-high heat
stir the ingredients together until the peaches are evenly coated
bring ingredients to a light simmer and cook, stirring often, until the liquid is more or less gone; this should take about 5-10 minutes
remove peaches from heat and allow them to cool slightly
Overnight Oats:
add all overnight oat ingredients into an airtight jar and mix together with a spoon until well combined
add the cooled peach topping evenly to the top of the oats
seal the jar and place in the fridge for at least 6 hours or preferably overnight
the next day if the oatmeal seems too thick, add more almond milk as needed
This will keep in the fridge for up to 4 days.
