Mini Bacon-Cheddar Frittata

Ingredients:

  • 5 slices bacon sliced into 1/4-inch bits and cooked until crispy

  • 10 large eggs

  • 1/2 cup cheddar cheese shredded

  • 1/2 teaspoon salt

  • black pepper

  • olive oil

Utensils:

  • muffin tin

  • mixing bowl

  • whisk

  • skillet


Instructions:

  1. prepare ingredients

  2. preheat the oven to 375°F

  3. grease a muffin tin entirely with olive oil and set aside

  4. whisk 10 large eggs together in a mixing bowl

  5. add 1/2 tsp of salt to the eggs

  6. add black pepper to taste to the eggs and beat together until mixed

  7. pour the beaten eggs evenly into the 12 muffin tins

  8. evenly add the cooked bacon crumbles into each frittata

  9. get 1/2 cup of shredded cheddar cheese and evenly add it into each frittata

  10. place muffin tin in the oven at 375°F for 15-20 minutes or until cooked through

  11. remove frittatas from the oven and allow them to cool completely before removing from the muffin tin

  12. once cooled remove from tin and enjoy


Store leftovers in an airtight container in the fridge or freezer for longer lasting. When you are ready for serving just pop them in the microwave to reheat.
