Ingredients:
4 medium sweet potatoes washed and dried
2 tablespoons unsalted butter or ghee melted
1/2 teaspoon salt
black pepper
4 strips bacon
2 tbsp chives chopped
Utensils:
knife
baking sheet
tongs
skillet
parchment paper
basting brush
Instructions:
prepare ingredients
preheat the oven to 425°F
line a baking sheet with parchment paper
cut 1/4-inch slices that go almost all the way through the sweet potatoes, but not all the way through because you want them to stay attached at the bottom
place the potatoes on the prepared baking sheet
brush the potatoes evenly with 2 tbsp of melted butter
sprinkle with salt and pepper to taste and place in the oven at 425°F for 40 minutes
meanwhile, cook 4 strips of bacon and set them aside on a cutting board and reserve the fat
once the potatoes have baked, brush them with the reserved bacon fat and place them back in the oven at 425°F for 20 additional minutes
once the potatoes finish baking, chop the bacon into 1-inch slices and place them between the potato slices
place the potatoes back in the oven at 425°F for 10 additional minutes
Remove potatoes from oven and allow them to cool slightly
When you are ready for serving, serve with a fried egg on top and sprinkle with chives.
