Cookie Cake

Ingredients:

  • 2 cups almond flour

  • 1/2 cup compliant brown sugar

  • 1/2 cup compliant sugar

  • 1 teaspoon salt

  • 1/4 teaspoon baking soda

  • 1 tablespoon vanilla extract

  • 2 large eggs

  • 1/2 cup lily's semi-sweet chocolate chips

Utensils:

  • 8-inch round baking pan

  • mixing bowl

  • whisk

  • mixing spatula

  • parchment paper


Instructions:

  1. prepare ingredients

  2. preheat the oven to 350°F

  3. get a mixing bowl and add 2 large eggs

  4. add 1 tbsp of vanilla extract and whisk together until smooth

  5. add 2 cups of almond flour to the bowl

  6. add 1/2 cups of brown sugar to the bowl

  7. add 1/2 cup of sugar to the bowl

  8. add 1 tsp of salt to the bowl

  9. add 1/4 tsp of baking soda to the bowl

  10. add 1 tbsp of vanilla extract to the bowl and mix together until combined

  11. add 1/2 cup of chocolate chips to the bowl and fold together until evenly distributed

  12. line grease and line a 8-inch round pan with parchment paper

  13. pour the batter into the pan and use your hands to press the cookie dough into the pan in a single layer

  14. place the cake in the oven at 350°F for 22-25 minutes until browned on top

  15. remove the cake from the oven and allow it to completely cool

  16. once cooled remove the cake from the pan and decorate with frosting of choice


When you are ready for serving cut the cake up into slices and store leftovers in an airtight container on the counter or in the fridge to last longer.
