Ingredients:
3 pounds pork butt cut into 3-inch strips
1/4 cup compliant sugar
2 teaspoons salt
1/2 teaspoon five spice powder
1/4 teaspoon white pepper
1/2 teaspoon sesame oil
1 tablespoons rice wine vinegar
1 tablespoon coconut aminos or soy sauce
1 tablespoon miso
2 teaspoons molasses
3 cloves garlic minced
2 tablespoons honey
1 tablespoon water
green onions thinly sliced
Utensils:
large mixing bowl
plastic wrap
rimmed baking sheet
wire rack
tongs
knife
cutting board
basting brush
Instructions:
prepare ingredients
get a large mixing bowl and add 1/4 cup sugar
add 2 tsp of salt to the bowl
add 1/2 tsp of five spice powder to the bowl
add 1/4 tsp of white pepper to the bowl
add 1/2 tsp of sesame oil to the bowl
add 1 tbsp of rice wine vinegar to the bowl
add 1 tbsp of coconut aminos to the bowl
add 1 tbsp of miso to the bowl
add 2 tsp of molasses to the bowl
add 3 minced garlic cloves to the bowl and mix until smooth
add 3 lbs of pork butt to the bowl and toss to combine
cover the bowl with plastic wrap and place in the fridge to marinate for at least 8 hours or overnight
preheat the oven to bake, not convection bake, at 475°F
position the rack in the upper third of the oven
fill a rimmed baking sheet with 1-2 cups of water to prevent the drippings from burning and place a wire rack on top of it
place the marinated pork on the rack, leaving as much space as possible between the pieces and place the bowl containing the extra marinade aside for later
transfer the pork to the oven at 475°F for 10 minutes
without opening the oven reduce the temperature to 375°F for another 15 minutes
next, flip the pork over and turn the pan 180° to ensure even roasting; if the bottom of the pan is dry, add more water
continue roasting for another 15 minutes at 375°F
add 2 tbsp of honey to the reserved marinade
add 1 tbsp of water to the same bowl and mix together until smooth
once the pork has roasted for a total of 40 minutes, flip the pork again and baste it with the reserved marinade and roast for 10 minutes
repeat this process once more
by now the pork has cooked for 1 whole hour and should be cooked through and caramelized on top; if it's not caramelized to your liking the broil it on low for a couple minutes but be sure to watch it continuously if you do
let the meat rest for 10 minutes before slicing
When you are ready for serving, serve over rice or veggies and garnish with sliced green onions if you desire.
