Ingredients:
1 1/2 cups whole wheat panko bread crumbs
1 teaspoon kosher salt
1 teaspoon black pepper
1 teaspoon onion powder
1 teaspoon paprika
1/2 teaspoon garlic powder
1/4 teaspoon cayenne pepper
2 large eggs
2 tablespoons fat-free milk or almond milk
1 pound boneless skinless chicken breasts cubed
olive oil spray
Utensils:
rimmed baking sheet
2 medium bowls
mixing spatula
wire rack
tongs
knife
cutting board
Instructions:
prepare ingredients
preheat the oven to 400°F
add 1 1/2 cups of panko breadcrumbs onto a large baking sheet and spread into an even layer
spray the panko with olive oil spray and place in the oven at 400°F for 2 minutes then stir them um and bake for an additional 2-3 minutes until golden brown
transfer the breadcrumbs to a medium bowl
add 1 tsp of salt to the bowl
add 1 tsp of black pepper to the bowl
add 1 tsp of onion powder to the bowl
add 1 tsp of paprika to the bowl
add 1/2 tsp of garlic powder to the bowl
add 1/4 tsp of cayenne pepper to the bowl and stir together until well mixed and set aside
get a second mixing bowl and add 2 eggs
add 2 tbsp of milk to the bowl and whisk together until smooth and set aside
line a baking sheet with a wire rack and spray with olive oil
dip each chicken cube into the egg wash
then use tongs to grab each chicken nugget and toss it into the panko mixture and toss until completely coated
then transfer the chicken nuggets to the wire rack making sure to place them about an inch apart
repeat this process with the remining chicken
place the chicken in the oven at 400°F for 20-25 minutes until cooked through and golden brown
When you are ready for serving, dip them in sauce of choice.
