Banana Pancakes

Ingredients:

  • 3 large bananas

  • 6 large eggs

  • 1/3 cup coconut flour

  • 1 1/2 teaspoons baking powder

  • coconut oil

Utensils:

  • large skillet with lid

  • food processor or high speed blender

  • spatula


Instructions:

  1. prepare ingredients

  2. get a food processor and add 3 large bananas

  3. crack 6 large eggs into the processor

  4. add 1/3 cup of coconut flour to the processor

  5. add 1 1/2 teaspoons of baking powder to the processor and blend until completely smooth; if the batter seems too thin then add 1-2 tbsp more coconut flour

  6. get a large skillet over low heat and spray with coconut oil so the pancakes don't stick

  7. pour pancake batter into the skillet in a 3 inch circle and cover with the lid

  8. cook for 2-3 minutes then remove lid and flip pancakes

  9. turn the heat to medium and cook an additional 1-2 minutes then remove from skillet

  10. repeat with remaining batter


When you are ready for serving top your pancakes with syrup, whipped cream, berries, or any other toppings of choice.
