Ingredients:
2 1/2 pounds green beans trimmed
kosher salt
1/2 pound bacon chopped
1 small yellow onion minced
3 garlic cloves minced
1 teaspoon red pepper flakes
1/2 lemon juiced
Utensils:
large pot
slotted spoon
large bowl
large skillet
tongs
plate
paper towels
Instructions:
prepare ingredients
get a large pot of salted water over high heat and bring to a boil
place the green beans into the boiling water for about 5 minutes until bright green and tender then remove to a large bowl of ice water to stop the cooking
drain the beans and pat dry once cooled
get a large skillet over low heat and add 1/2 lb of chopped bacon and cook until crispy
remove the bacon to a paper towel lined plate to drain excess grease
remove all but 2 tbsp of bacon grease from the skillet and increase the heat to medium
add 1 small minced onion to the pan and saute for 4-5 minutes until translucent
add 3 minced garlic cloves to the pan
add 1 tsp of red pepper flakes to the pan and saute together for 1-2 minutes until fragrant
add the blanched green beans to the skillet and cook for 5 minutes until heated through
return the cooked bacon to the pan
add the juice of half a lemon to the pan
add salt and pepper to taste and toss together
When you are ready for serving, serve on the side of a dish.
