Bacon Green Beans

Ingredients:

  • 2 1/2 pounds green beans trimmed

  • kosher salt

  • 1/2 pound bacon chopped

  • 1 small yellow onion minced

  • 3 garlic cloves minced

  • 1 teaspoon red pepper flakes

  • 1/2 lemon juiced

Utensils:

  • large pot

  • slotted spoon

  • large bowl

  • large skillet

  • tongs

  • plate

  • paper towels


Instructions:

  1. prepare ingredients

  2. get a large pot of salted water over high heat and bring to a boil

  3. place the green beans into the boiling water for about 5 minutes until bright green and tender then remove to a large bowl of ice water to stop the cooking

  4. drain the beans and pat dry once cooled

  5. get a large skillet over low heat and add 1/2 lb of chopped bacon and cook until crispy

  6. remove the bacon to a paper towel lined plate to drain excess grease

  7. remove all but 2 tbsp of bacon grease from the skillet and increase the heat to medium

  8. add 1 small minced onion to the pan and saute for 4-5 minutes until translucent

  9. add 3 minced garlic cloves to the pan

  10. add 1 tsp of red pepper flakes to the pan and saute together for 1-2 minutes until fragrant

  11. add the blanched green beans to the skillet and cook for 5 minutes until heated through

  12. return the cooked bacon to the pan

  13. add the juice of half a lemon to the pan

  14. add salt and pepper to taste and toss together


When you are ready for serving, serve on the side of a dish.
