Apple Pie Overnight Oats

Ingredients:

Rolled Oats:

  • 1/2 cup rolled oats

  • 1 tablespoon chia seeds

  • 1/2 cup unsweetened almond milk

  • 1/4 cup greek yogurt

  • 2 teaspoons sugar-free maple syrup or pure maple syrup

  • 1/2 teaspoon cinnamon

  • 1/4 teaspoon nutmeg

  • pinch salt

  • 1/2 large apple peeled and blended

  • 1 scoop protein powder optional

Apple Topping:

  • 1/2 large apple peeled and diced

  • 1 tablespoon lemon juice

  • 2 tablespoons water

  • 1/2 teaspoon cinnamon

  • 1 tablespoon complaint brown sugar

Optional Toppings:

  • granola

  • sugar-free whipped cream

  • almond butter

  • additional cinnamon

Utensils:

  • airtight jar

  • spoon

  • high-speed blender

  • small sauce pan

  • mixing spatula


Instructions:

  1. prepare ingredients

Apple Topping:

  1. add all the apple topping ingredients into a small sauce pan and and place on the stove over medium-high heat

  2. stir the ingredients together until the apples are evenly coated

  3. bring ingredients to a light simmer and cook, stirring often, until the liquid is more or less gone; this should take about 5-10 minutes

  4. remove apples from heat and allow them to cool slightly

Overnight Oats:

  1. add all overnight oat ingredients into an airtight jar and mix together with a spoon until well combined

  2. add the cooled apple topping evenly to the top of the oats

  3. seal the jar and place in the fridge for at least 6 hours or preferably overnight

  4. the next day if the oatmeal seems too thick, add more almond milk as needed

This will keep in the fridge for up to 4 days.
