Ingredients:
2-3 zucchini sheeted
1 green bell pepper diced
1 red bell pepper diced
1 orange bell pepper diced
1 yellow bell pepper diced
1/2 large onion diced
10 garlic cloves minced
12 ounces tomato paste
2 pounds ground pork
8 ounces sharp cheddar cheese shredded
16 ounces mozzarella cheese shredded
13 ounces turkey sausage diced
24 ounces small curd cottage cheese
salt
black pepper
garlic powder

Utensils:
vegetable sheeter
large skillet
large mixing bowl
large baking dish
knife

Instructions:
prepare ingredients
preheat the oven to 375°F
Vegetables:
heat a large skillet over medium heat and add 2 tbsp of olive oil
add the 4 diced bell peppers to the skillet
add 1/2 of a large diced onion to the skillet and saute together with the spatula
sprinkle salt, black pepper, and cumin to taste to the veggies
add the 10 minced garlic cloves to the pan and cook until the veggies become soft, stirring occasionally, then add them to a large mixing bowl
Meat:
turn the skillet to a medium-low heat and add 2 tbsp of olive oil
add 13 oz of diced turkey sausage to the skillet and saute until it is partially crispy and beginning to brown then add it to the large mixing bowl along with the cooked vegetables
add 2 lbs of ground pork to the now empty skillet
sprinkle black pepper, cumin, and garlic powder to taste to the pork
saute until it begins to brown a little, breaking it apart as it cooks with the spatula, then add it to the large mixing bowl with the vegetables and sausage
Lasagna:
get the large mixing bowl containing the cooked veggies and meat and add 12 oz of tomato paste
using the spatula mix everything together until it's been evenly distributed
in a large baking dish lay out an even layer of the sheeted zucchini so that it covers the bottom of the dish
using a large spoon add 1/2 of the meat/veggie mixture evenly on top of the zucchini
add 1/2 of cottage cheese (12 oz) evenly on top of the meat/veggie mix
add 1/2 of the shredded sharp cheddar cheese (4 oz) evenly on top of the cottage cheese
add 1/2 of the shredded mozzarella cheese (8 oz) evenly on top of the cheddar cheese
repeat this process once more starting with the sheeted zucchini then place the lasagna in the oven at 375°F for about 30 minutes or until the cheese begins to brown
once the lasagna is cooked remove it from the oven and allow it to sit out for 10-20 minutes to cool
When you are ready for serving cut the lasagna into 12 squares and use a spatula to serve yourself a piece onto a plate.
