Andy's Spicy Pasta With Blackened Chicken

Ingredients:

Sauce:

  • 1 tablespoon olive oil

  • 4 garlic cloves minced

  • 1/2 cup white wine

  • 1/4 cup butter

  • 8 ounces cream cheese or fat-free

  • 1/2 lemon juiced

  • 1 cup heavy cream

  • cayenne pepper

  • 1 tsp black pepper

  • 1/4 cup parmesan cheese finely grated

  • parsley chopped

  • pasta noodles of choice

Chicken:

  • 4 boneless skinless chicken breasts cut in half through the center

  • salt

  • black pepper

  • garlic powder

  • cayenne pepper

  • 2 tablespoons olive oil

Utensils:
  • sauce pan

  • large skillet

  • whisk

  • knife

  • tongs

  • cutting board


Instructions:​

  1. prepare ingredients

Sauce:​

  1. get a sauce pan over medium-low heat

  2. add 1 tbsp of olive oil to the pan

  3. add 8 minced garlic cloves to the pan and heat until the garlic begins to brown

  4. pour 1/2 cup of white wine into the pan and allow it to cook down for 1 minute

  5. add 1/4 cup of butter to the sauce and allow it to melt in

  6. add 8 oz of cream cheese and whisk together until everything melts together

  7. squeeze 1/2 a lemon into the sauce and whisk together

  8. pour 1 cup of heavy cream into the sauce and whisk together

  9. bring the sauce to a boil then turn the heat down to a simmer

  10. add cayenne pepper to your spice preference to the sauce

  11. add 1 tsp of black pepper to the sauce and whisk together and whisk together

  12. allow the sauce to simmer until it has thickened a bit

  13. right before mixing in the pasta add 1/4 cup of finely grated parmesan cheese to the sauce and whisk together

Chicken:​​

  1. get a large skillet over medium-low heat and add 2 tbsp of olive oil

  2. get 4 chicken breasts and cut them each in half through the center so you have 8 cutlets

  3. sprinkle salt, garlic powder, and cayenne to taste to both sides

  4. sprinkle black pepper heavily onto the chicken on both sides

  5. place the chicken into the heated skillet and cook for 6 minutes on both sides

  6. once the chicken has finished cooking turn off the heat and remove the chicken from pan and onto a cutting board

  7. allow it to sit and rest for a couple minutes before cutting

  8. once ready for serving cut the chicken into strips or dice it up

When you are ready for serving add some pasta to your dish and ladle over the sauce. Top with the blackened chicken and sprinkle over some parsley for garnish if you desire.
