Andy's Pork Meatballs With Lemon Cream Sauce

Ingredients:

Meatballs:​​

  • 2 pounds mild italian pork sausage

  • 1 tablespoon garlic powder

  • 2 tablespoons black pepper

  • 1 teaspoon paprika

  • 1/2 cup parmesan cheese finely grated

  • 1 handful parsley chopped

  • 1 large egg

  • 2 tablespoons butter melted

  • 1 tablespoon olive oil

Sauce:​​​

  • 1 tablespoon olive oil

  • 8 garlic cloves minced

  • 1/2 cup white wine

  • 1 cup lemon juice

  • 4 tablespoons butter

  • 1 heavy cream

  • 1 tablespoon lemon pepper

  • 1/2 tablespoon black pepper

  • 4 ounces 1/3 fat cream cheese or full-fat cubed

  • 1/3 cup parmesan cheese finely grated

Utensils:

  • sauce pan

  • large skillet

  • large mixing bowl

  • whisk

  • tongs

  • large plate


​Instructions:​

  1. prepare ingredients

Meatballs Part 1:​​

  1. get a large mixing bowl and add in 2 lbs of ground pork sausage

  2. add 1/2 cup of finely grated parmesan cheese to the bowl

  3. add 1 handful of chopped parsley to the bowl

  4. mix all the ingredients together using your hands

  5. add 2 tbsp of melted butter to the pork

  6. add 1 tbsp of garlic powder to the pork

  7. add 2 tbsp of black pepper to the pork

  8. add 1 tsp of paprika to the pork

  9. crack 1 large egg into the pork and mix together with your hands until everything is well incorporated

  10. start forming the meatballs that are about 2 inches in diameter by rolling them with your hands and set them to the side on the cutting board

Sauce:​

  1. heat a sauce pan over medium-low heat

  2. add 1 tbsp of olive oil to the pan

  3. add 8 minced garlic cloves to the pan and heat until they begin to brown

  4. pour 1/2 cup of white wine into the pan and allow it to cook down for 1 minute

  5. pour 1 cup of lemon juice and whisk together and allow it to cook down for 1 minute

  6. add 4 tbsp of butter to the pan and whisk continuously until melted

  7. pour 1 cup of heavy cream into the pan and whisk together

  8. add 1 tbsp of lemon pepper

  9. add 1/2 tbsp of black pepper and whisk together

  10. turn the heat down to a simmer and simmer for 10 minutes

  11. right before serving add 4 ounces of cubed cream cheese

  12. add 1/3 cup of finely grated parmesan cheese and whisk together until fully melted

Meatballs Part 2:​​​

  1. while the sauce is simmering heat a large skillet over medium-low heat and add 1 tbsp of olive oil and allow it to heat through

  2. place the meatballs in the skillet and cook for 2-3 minutes on each side using the tongs to flip them or until cooked through then turn off the heat

When you are ready for serving place meatballs on a plate then pour additional sauce over the top and sprinkle some chopped parsley if you desire.
