Andy's Cauliflower Mac N' Cheese

Ingredients:

  • 1/2 teaspoon kosher salt

  • 1 large head cauliflower cut into florets

  • 1 cup heavy cream

  • 2 ounces cream cheese diced

  • 1 1/2 teaspoons dijon mustard

  • 1 cup cheddar cheese shredded and separated

  • 1/2 cup muenster cheese shredded

  • 1/4 teaspoon black pepper

  • 1/8 teaspoon garlic powder

  • 1/4 cup crushed pork rinds

Utensils:

  • large pot

  • knife

  • cutting board

  • 8 x 8 inch baking dish

  • sieve

  • towel

  • grate

  • sauce pan

  • mixing spatula


Instructions:

  1. prepare ingredients

  2. preheat the oven to 375°F

  3. fill a large pot with water and bring to a boil

  4. grease the baking dish and set aside

  5. place the cauliflower florets into the boiling water and cook for 5 minutes then drain and pat dry with towels

  6. return the cooked cauliflower to the pot and set aside

  7. get a sauce pan on the stove over medium heat and add 1 cup of cream

  8. add 2 oz of cream cheese to the pan

  9. add 1 1/2 tsp of dijon mustard to the pan and whisk together until melted and smooth

  10. add 1/2 cup of shredded cheddar to the pan

  11. add 1/2 cup of shredded muenster to the pan

  12. add 1/2 tsp of salt to the pan

  13. add 1/4 tsp of pepper to the pan

  14. add 1/8 tsp of garlic powder to the pan and whisk together until melted and smooth

  15. pour the cheese sauce all over the cauliflower and toss to combine

  16. pour the cauliflower into the prepared pan top the cauliflower with the remaining 1/2 cup of shredded cheddar evenly over the top

  17. sprinkle 1/4 cup of crushed pork rinds evenly over the top

  18. place in the oven at 375°F for 15 minutes or until browned and bubbly


When you are ready for serving, scoop some mac onto the side of your plate.
