Ingredients:
1/2 teaspoon kosher salt
1 large head cauliflower cut into florets
1 cup heavy cream
2 ounces cream cheese diced
1 1/2 teaspoons dijon mustard
1 cup cheddar cheese shredded and separated
1/2 cup muenster cheese shredded
1/4 teaspoon black pepper
1/8 teaspoon garlic powder
1/4 cup crushed pork rinds
Utensils:
large pot
knife
cutting board
8 x 8 inch baking dish
sieve
towel
grate
sauce pan
mixing spatula
Instructions:
prepare ingredients
preheat the oven to 375°F
fill a large pot with water and bring to a boil
grease the baking dish and set aside
place the cauliflower florets into the boiling water and cook for 5 minutes then drain and pat dry with towels
return the cooked cauliflower to the pot and set aside
get a sauce pan on the stove over medium heat and add 1 cup of cream
add 2 oz of cream cheese to the pan
add 1 1/2 tsp of dijon mustard to the pan and whisk together until melted and smooth
add 1/2 cup of shredded cheddar to the pan
add 1/2 cup of shredded muenster to the pan
add 1/2 tsp of salt to the pan
add 1/4 tsp of pepper to the pan
add 1/8 tsp of garlic powder to the pan and whisk together until melted and smooth
pour the cheese sauce all over the cauliflower and toss to combine
pour the cauliflower into the prepared pan top the cauliflower with the remaining 1/2 cup of shredded cheddar evenly over the top
sprinkle 1/4 cup of crushed pork rinds evenly over the top
place in the oven at 375°F for 15 minutes or until browned and bubbly
When you are ready for serving, scoop some mac onto the side of your plate.
