Ingredients:
2 cups blanched almonds soaked
1/4 cup olive oil
2 garlic cloves
1 1/2 teaspoons salt
1/2-3/4 cup water
1/4 cup lemon juice
Utensils:
high speed blender
large bowl
sauce pan
Instructions:
prepare ingredients
get a sauce pan filled with water over a high heat and bring to a rolling boil
add 2 cups of blanched almonds to a large bowl
pour boiling water over the almonds and cover
allow almonds to soak for at least 4 hours before use
get a high speed blender and add the soaked and drained almonds
add 1/4 cup of olive oil to the blender
add 2 garlic cloves to the blender
add 1 1/2 teaspoons of salt to the blender
add 1/2 cup water to the blender
add 1/4 cup of lemon juice to the blender and blend on a high speed until smooth and well mixed; if it seems thick add more water
Keep almond cream cheese in an airtight container in the fridge until you are ready for use
