Almond Cream Cheese

Ingredients:

  • 2 cups blanched almonds soaked

  • 1/4 cup olive oil

  • 2 garlic cloves

  • 1 1/2 teaspoons salt

  • 1/2-3/4 cup water

  • 1/4 cup lemon juice

Utensils:

  • high speed blender

  • large bowl

  • sauce pan


Instructions:

  1. prepare ingredients

  2. get a sauce pan filled with water over a high heat and bring to a rolling boil

  3. add 2 cups of blanched almonds to a large bowl

  4. pour boiling water over the almonds and cover

  5. allow almonds to soak for at least 4 hours before use

  6. get a high speed blender and add the soaked and drained almonds

  7. add 1/4 cup of olive oil to the blender

  8. add 2 garlic cloves to the blender

  9. add 1 1/2 teaspoons of salt to the blender

  10. add 1/2 cup water to the blender

  11. add 1/4 cup of lemon juice to the blender and blend on a high speed until smooth and well mixed; if it seems thick add more water


Keep almond cream cheese in an airtight container in the fridge until you are ready for use
