Almond Butter Banana Baked Oatmeal

Ingredients:

  • 2 cups rolled oats

  • 1 teaspoon cinnamon

  • 1 teaspoon baking powder

  • 1 tablespoon flaxseed

  • 1/4 teaspoon salt

  • 2 over ripe bananas mashed

  • 1 1/2 cups unsweetened almond milk

  • 1/4 cup creamy almond butter or other nut butter

  • 2 tablespoons sugar-free maple syrup or pure maple syrup

  • 1 teaspoon vanilla extract

  • coconut oil

Utensils:

  • large mixing bowl

  • mixing spatula

  • 8 x 11 inch baking dish


Instructions:

  1. preheat the oven to 375°F

  2. add 2 cups of rolled oats to a large mixing bowl

  3. add 1 tsp of cinnamon to the bowl

  4. add 1 tsp of baking powder to the bowl

  5. add 1 tbsp of flaxseeds to the bowl

  6. add 1/4 tsp of salt to the bowl and mix together to evenly distribute

  7. add 2 mashed bananas to the bowl

  8. add 1 1/2 cups of unsweetened almond milk to the bowl

  9. add 1/4 cup of almond butter to the bowl

  10. add 2 tbsp of syrup to the bowl

  11. add 1 tsp of vanilla extract to the bowl and mix together until well combined

  12. allow the mixture to stand for 5 minutes to allow the flaxseeds to set

  13. spray or grease he baking dish with coconut oil

  14. pour the mixture into the baking dish and spread evenly

  15. place baking dish in the oven at 375°F for 30-35 minutes or until the top is golden and the mixture is set

  16. remove from oven and allow it to sit out and cool for 10 minutes before slicing


When you are ready for serving, cut the oatmeal into 6 squares and serve with additional almond butter or bananas if you desire. Store leftovers in an airtight container in the fridge.
