Ingredients:
2 cups rolled oats
1 teaspoon cinnamon
1 teaspoon baking powder
1 tablespoon flaxseed
1/4 teaspoon salt
2 over ripe bananas mashed
1 1/2 cups unsweetened almond milk
1/4 cup creamy almond butter or other nut butter
2 tablespoons sugar-free maple syrup or pure maple syrup
1 teaspoon vanilla extract
coconut oil
Utensils:
large mixing bowl
mixing spatula
8 x 11 inch baking dish
Instructions:
preheat the oven to 375°F
add 2 cups of rolled oats to a large mixing bowl
add 1 tsp of cinnamon to the bowl
add 1 tsp of baking powder to the bowl
add 1 tbsp of flaxseeds to the bowl
add 1/4 tsp of salt to the bowl and mix together to evenly distribute
add 2 mashed bananas to the bowl
add 1 1/2 cups of unsweetened almond milk to the bowl
add 1/4 cup of almond butter to the bowl
add 2 tbsp of syrup to the bowl
add 1 tsp of vanilla extract to the bowl and mix together until well combined
allow the mixture to stand for 5 minutes to allow the flaxseeds to set
spray or grease he baking dish with coconut oil
pour the mixture into the baking dish and spread evenly
place baking dish in the oven at 375°F for 30-35 minutes or until the top is golden and the mixture is set
remove from oven and allow it to sit out and cool for 10 minutes before slicing
When you are ready for serving, cut the oatmeal into 6 squares and serve with additional almond butter or bananas if you desire. Store leftovers in an airtight container in the fridge.
