5 Onion Dip

Ingredients:

  • 2 tablespoons butter

  • 3 stalks green onions diced

  • 1 medium red onion diced

  • 1 medium yellow onion diced

  • 1 small white onion diced

  • 1 teaspoon kosher salt

  • 2 tablespoons compliant brown sugar

  • 3 tablespoons white wine vinegar

  • 1 tablespoon worcestershire sauce

  • 4 garlic cloves minced

  • 8 ounces cream cheese room temperature

  • 3 cups greek yogurt

  • 2 tablespoon chives chopped

  • 1/2 cup parmesan cheese finely grated

Utensils:

  • large cast iron skillet or regular skillet

  • mixing spatula

  • large mixing bowl

  • 8 x 8 inch baking dish


Instructions:

  1. prepare ingredients

  2. preheat the oven to 400°F

  3. get a large cast iron skillet over medium heat and add 2 tbsp of butter and allow it to melt

  4. add the 4 diced onions to the skillet and sprinkle with 1 tsp of salt

  5. add 2 tbsp of compliant brown sugar to the skillet and stir together

  6. cook onions stirring occasionally for 10-15 minutes

  7. add 3 tbsp of white wine vinegar to the onions

  8. add 1 tbsp of worcestershire sauce to the onion and continue cooking for another 4-5 minutes or until the onions are a soft and caramel color

  9. add 4 minced garlic cloves to the onions and cook stirring for another 1 minute

  10. add 8 oz of cream cheese to the skillet and stir together until it is melted into the onions then remove to a large mixing bowl

  11. add 3 cups of greek yogurt to the bowl

  12. add 2 tbsp of chopped chives to the bowl and stir together until combined

  13. transfer the dip into an 8 x 8 inch baking dish and and top evenly with 1/2 cup of grated parmesan cheese

  14. place in the oven at 400°F for 15-20 minutes or until golden and bubbly


When you are ready for serving, serve with crostini, chips, or vegetables of choice.
