Ingredients:
2 tablespoons butter
3 stalks green onions diced
1 medium red onion diced
1 medium yellow onion diced
1 small white onion diced
1 teaspoon kosher salt
2 tablespoons compliant brown sugar
3 tablespoons white wine vinegar
1 tablespoon worcestershire sauce
4 garlic cloves minced
8 ounces cream cheese room temperature
3 cups greek yogurt
2 tablespoon chives chopped
1/2 cup parmesan cheese finely grated
Utensils:
large cast iron skillet or regular skillet
mixing spatula
large mixing bowl
8 x 8 inch baking dish
Instructions:
prepare ingredients
preheat the oven to 400°F
get a large cast iron skillet over medium heat and add 2 tbsp of butter and allow it to melt
add the 4 diced onions to the skillet and sprinkle with 1 tsp of salt
add 2 tbsp of compliant brown sugar to the skillet and stir together
cook onions stirring occasionally for 10-15 minutes
add 3 tbsp of white wine vinegar to the onions
add 1 tbsp of worcestershire sauce to the onion and continue cooking for another 4-5 minutes or until the onions are a soft and caramel color
add 4 minced garlic cloves to the onions and cook stirring for another 1 minute
add 8 oz of cream cheese to the skillet and stir together until it is melted into the onions then remove to a large mixing bowl
add 3 cups of greek yogurt to the bowl
add 2 tbsp of chopped chives to the bowl and stir together until combined
transfer the dip into an 8 x 8 inch baking dish and and top evenly with 1/2 cup of grated parmesan cheese
place in the oven at 400°F for 15-20 minutes or until golden and bubbly
When you are ready for serving, serve with crostini, chips, or vegetables of choice.
